What fixture installation actually involves
The fixture is the easy part
Swapping a tap, a toilet or a sink is straightforward when everything behind it cooperates. What decides the job is what is already in the wall: the rough-in dimensions, the age and condition of the shut-off valves, and whether the new fitting matches the valve body that is already there.
That last one catches people out with showers in particular. The visible trim and the valve inside the wall are usually a matched pair from one manufacturer, so changing the look can mean opening the wall.
A standard toilet rough-in, the distance from the finished wall to the centre of the drain, is twelve inches, but ten and fourteen both exist in older houses. Measure before you buy, because the pan will not move to suit the pipe.

On a fixture swap in an older house, the thing most likely to go wrong is not the new fitting. It is the small isolating valve under the sink being asked to close for the first time in twenty years.
Old compression stops seize, and forcing one can shear it or leave it weeping once the job is done, which turns a one-hour swap into a repair on the supply line.
A good plumber will expect this and price replacing the stops as part of the work. A quote that does not mention them on an old house is a quote with a variation waiting inside it.

Trim that does not fit the valve
“Does this trim fit the valve that is already in the wall, or does the valve have to change?”
Shower and bath trim is manufacturer-specific. Buying a finish you like and assuming it will fit the existing valve body is the most common way a simple swap becomes a tiled wall coming off. Confirm compatibility before anything is ordered.
Supplying your own fixture
“If I supply the fixture, who carries the warranty and what happens if it is faulty?”
Buying the fitting yourself usually saves money and moves the warranty onto you. If it arrives damaged, is the wrong rough-in, or fails in a year, the labour to deal with it is a fresh charge. That trade is often worth making, as long as it is made knowingly.

What should I ask before booking fixture installation?
Ask what the quote includes and excludes, who is doing the work, whether a permit is needed and who is pulling it, and what the workmanship warranty covers. Get the answers in writing before anyone starts.
How do I compare quotes for this?
Put them on one sheet line by line. Differences in price almost always turn out to be differences in scope, material grade or warranty length rather than margin.
Is fixture installation priced separately from the rest of the job?
